Slice of Ramadan at Māngere Refugee Centre

This Ramadan, Chef Chris Waghorn and his team at Māngere Refugee Centre are working long, 20-hour days to support over 200 refugees. With many fasting, including four of his own staff, they prepare both suhoor (pre-dawn) and iftar (post-sunset) meals, alongside regular meals for everyone else.

To celebrate the diverse cultures they serve, Chef Waghorn introduced ‘theme nights’, where refugees cook traditional dishes from their home countries.

It’s not just about food; it’s about connection. Waghorn shares a powerful moment when two groups, initially reluctant to work together, ended up bonding by the week’s end. "By Wednesday, they were taking selfies together. That’s what I wanted."
